Total land area of Victoria is 237,629km2 which is similar to Japan's Honshu island, but the population is only 5.8 million people and majority of the land is rural and inhabited. There are numerous rivers, dam lakes and reservoirs in the vast land of Victoria, and natural eels live in large spread out areas. In Australia, there are no culture of eating eels, so the amount of eel catch has been very small, which can be understood by the current abundant resources. Along with the environmental management by the Australian government and minimizing the impact on the ecosystem, our suppliers work to maintain a sustainable fishery, and regularly change their fishing grounds.

State of purging

Eels harveted are firstly purged to relieve the stress, then go through quality grading and sizing assortment prior to shipping. SOUTHERN EELS AUSTRALIA performs all purging, grading, packing and shipping operations.

  • All wild eels collected by SOUTHERN EELS AUSTRALIA are purged in large tanks to reduce stress and to restore strength.
  • After several days of purging, quality and size grading for exports are carried out and then sent by air freight to Japan.
  • After arrival in Japan and import customs clearance procedures are completed, all eels are brought to Ebisen Co., Ltd. in Hamamatsu City, Shizuoka Prefecture, and purged using mineral-rich groundwater from Lake Hamana to reduce stress during transportation every eel is delievered to customer from Ebisen along with a certificate.

Wild eels are different from farmed eel and can be characterized by its large size and firm meat quality. The taste of Australian wild eels grown in the wilderness of Australia is exceptional. Eels are very active from spring to autumn, but in winter, the eels go into hibernation, and supply either decreases dramaticaly of the supply can cease.
Do to Australia being in the southern hemisphere, we have the advantage to supply wild eels during the off season in Japan.
